“Men..Hallelujah its raining men”  And now onto lunch…

Tofu plus 1 Egg White scrambled and seasoned with a sprinkling of a Ranch Dressing Seasoning packet. I added frozen spinach, mixed veggies and brussel sprouts that I had heated in the microwave. I put all of that on top of a whole wheat tortilla. It was so delicious I actually made more tofu and veggies.

It was so fun because tomorrow is St. Patrick’s Day and I didn’t realize how green and white it all was until I threw onto the tortilla! 

Newman’s Own Organic Soy Crisps, White Cheddar:

What I think: Just as I suspected when I opened my package of NOO goodies, these were AWESOME!  Each crisp was puffy and cheesy and perfect! They pack 8 g of soy protein in each serving too! I had one serving and a couple extra! I think I will use the next serving to create some using them as breading but I may just gobble them down before I can do that because they are that fantastic!

What Nell Newman Says: “The Crisps can be used for more than the expected snack,” says Nell. “Use the White Cheddar to add some crunch to tuna fish. If you put them in the food processor for several minutes to create crumbs, they can be used as a breading for baked chicken, or as a flavorful replacement for breadcrumbs in meatballs or meatloaf. Kids love to float them in soup. It’s fun to experiment with different ways to use them.”

Solo Dinner:

Jeff let me know this afternoon that he had a business meeting for dinner so I was solo for dinner. I didn’t really want leftovers so I decided to do a quick simple salad with cauliflower and zuchinni and carrots ( underneath, I know you can’t see them but they are there) and then some grilled chicken and a piece of cornbread casserole I had made yesterday…


Yoga ( Power Yoga 70 min. from

30 Day Shred DVD, Level 2 and the first circuit of Level 3. I had checked out Level 3 a few times and so far I like the first circuit. I am still motivated for this challenge but I am thinking soon I will get sick of watching Jillian.. She looks a little evil near the end with the squats where you raise both your arms to work your anterior delts. Any of you other “shredders” noticed her evil face?

Rest from running


I had a meeting with a volunteer organization involved with nutrition and healthy cooking. I am so excited to get started. I will be putting up a page for them on my blog and I will also be a Nutrition Instructor for Operation Frontline AND I am going to “spearhead” an event for fundraising for the organization. I AM THRILLED! I already started my post for them and will probably have it up by tomorrow!

We have a project coming up in Metabolism class that I really should get started on. We have to explain what happened metabolically to a group of travelers 100 yrs ago when they traveled across the ocean and shipwrecked. Apparently, they survived and for the few years they were stuck, while they ate nothing but seals and whale blubber. They did come down with odd symptoms and I think some died. For the most part though, you would think they would’ve suffered from all kinds of things like scurvy (lack of vitamin C ) or some other malnutrition illnesses but they didn’t. Pretty interesting but thank goodness we are working in groups!


I really want to switch gyms so that I can get a regular schedule down with the classes they offer.

It is the fourth straight day of pure rain and chilliness… Tomorrow is supposed to be bright, sunny and 70* I CAN’T WAIT!

I am so pumped up to be working with such a fantastic organization even if it is on a volunteer basis. Regardless of that, it will be a great experience.

I am going to just state again, in case the Newman’s people read this, how much I want a box of snacks. 😀

Anyway, congrats on the volunteer position! I bet you will get good experience. Your metabolism class sounds interesting. Whenever my dad has less than 3 fruits a day he claims he is going to get scurvy. 😀

Congrats on the new position! Very cool…and Metabolism class?! That actually sounds like a science-related class I wouldn’t fall asleep in!

And a big THANK YOU for the tips! My knee thanks you too! Can’t wait to cha-cha-cha before my next run 🙂
