Banana’s Foster Stuffed French Toast

it was just too good yesterday to not make again and I still have all the ingredients!

The tough part : It is always better the first time around! I think today i “tried to hard” . That tells you how I cook- I barely ever do “recipes” . I do follow them if I am making a specific thing from a recipe but for me, when I want to make something fun/new/healthier etc. I just throw in what I think would work (hence the Laural-Mo Creation Friday Dinners). I don’t think its ever come out bad because of it but sometimes I try to remake it with a specific recipe and it comes out different.

So I made tiny changes too- Yesterday, I added pumpkin spice to the egg mix- The toast tasted PHENOMNEAL! The leftover eggs were, hmm- just like pumpkinny eggs… quite yummy actually i would eat them again that way. However, today i tried adding the spice after the bread was dipped and in the pan. The toast came out yummy and the eggs tasted more egg-like. I did not add extra fruit, and I used much less “stuffing” yogurt since I had an extra entire piece of bread. I can’t rave enough about a sliced banana in a frying pan, when it caramelizes on its side- SO GOOD!

There is little pb smear too. Comparing today and yesterdays, yesterdays totally wins because ::
1. the blueberries and strawberries melted juice added another “level” like a syrup would

2. i used the but of the loaf and one slice, so less bread was better for my tastes
3. i love protein, so more yogurt instead of bread fills me up better and makes me feel better than say more bread would…

So much reflection on a delicious meal!
Today’s plan:

Body:
I plan on going to the gym in about an hour-
Strength: Abs, BBQ (back, biceps, quads)
Cardio: Bike/Elliptical

Mind:
Class: My article for presentation is due and I found one that might work yesterday- I am going to email the prof. soon to check. I wanted to examine reservation environment effect on Native American health but can’t find ANY articles close to that. So I found one on Vitamin D deficiency in Native American populations contributing to diabetes development….
Soul:
not sure yet! I did not make the returns i wanted to yesterday because I wanted to read more for class so i will probably do those returns today…




Dinner for Two times Two!

Dinner:
Fake Meat! Morningstar farms grillers crumbles, curried sweet potato slices, sauteed onion, asparagus spears This is how I made it- I put the asparagus spears ( 12 made one serving for 25 calories, so I put in three servings total) on bottom dressed in olive oil and lemon pepper seasoning, added on top the thawed Morningstar Crumbles, Added the chopped onion. While I was doing that, I had sliced two sweet potatoes- tossed them in curry powder, salt, brown sugar, coriander ( all minimal just so each had a bit of seasoning) – then microwaved the potato for about 5 minutes.

I layered them on top to make it more like a vegan “shepards pie”- and put it in the toaster oven for 25 minutes at 350.
Perfect for two!

While it baked I decided to go ahead and do dinner for tomorrow night since I was in the mood – get it out of the way while I want to right? Homemade meat sauce ( Jennie -O ground turkey and Jennie-O turkey sausage).
As you can see below… in the tupperware I put two servings of gr. turkey, and three sausages.. then I put the rest in baggies for the freezer for another meal. I find it would be better utilization, since we can grill the sausages for sandwhiches one night and could do all kinds of things with the gr turkey (meatballs, tacos, burgers…) . I sauteed a medium onion with three or four small garlic cloves, added dried basil and dried oregano, a little olive oil, threw in some Sherry …

Then I addded the turkey in small chunks like meatballs into the onion garlic mix… let them cook then added the sausage in the same way.
After this I added a can of crushed tomatoes in basil ( the big can)… and you will have to wait till tomorrow to see the dinner!

Jeff’s little sister came over to borrow clothes and we ended up talking for four hours!! We have SO much in common! We are getting our nails done on thursday and shopping for shoes- total girls!

Today’s Wrap Up

Body:
Elliptical 22 minutes, Bike 9 miles in 19 minutes, Walked Jack for 20 minutes (up hill both ways haha), Yoga 30 minutes… yoga felt amazing today!

Strength: Abs, Quads, Back and Biceps

Mind:
Read some of SFN, and some of Organic Inc… suduko as usual!

Soul:
Talked with KC, Yoga, Yoga Yoga! , Cleaned and Organized my room- and did four loads of laundry… so coincidental because KC came over to borrow clothes! Cooked Two dinners!

Ready for another day and a doctor’s appointment for my knee! fingers crossed everyone

How funny- my lifting splits are BBQ.. Back, Bicepts, Quads and abs

I thought it was hilarious , anyhow- I am BBQ lifting at home, heading to school for my loan refund check (hooray for money! even if its borrowed technically)… then study adv. nutrient metabolism, then cardio/run!
